A little weather insurance,
it worked out well.

Did you have desert?

Susan Meyer's Spumoni was clearly the favorite.
Many people were asking her for the recipe. Here it is by popular demand.

Spumoni Recipe

2 cups whipping cream
2/3 cup (7 ounces) sweetened condensed milk
1/2 teaspoon rum extract
1 can (21 ounces) cherry pie filling
1/2 cup chopped almonds
1/2 cup miniature chocolate chips

slivered almonds and cookies for garnish

  1. Combine the whipping cream, sweetened condensed milk, and rum extract in a large bowl; cover and refrigerate for at least 30 minutes
  2. Remove cream mixture from refrigerator and beat just until soft peaks form. To test, lift beaters; mixture should form droopy but definite peaks. Do not overbeat.
  3. Fold in cherry pie filling with rubber spatula by gently cutting down to bottom of the bowl, scraping up side of bowl then folding over top of mixture. Repeat until filling is evenly incorporated.
  4. Fold in chopped almonds and chocolate chips as described above.
  5. Transfer to 8-inch square pan (or other suitable container). Cover and freeze about 4 hours or until firm.
  6. Scoop out to serve. Garnish if desired.
Makes about 1 quart
