Recipe of the Month

Mushroom and Bacon Appetizers

4 oz can mushroom stems and pieces
6 strips of bacon, cooked very crisp
½ tsp. garlic powder
4 tbsp. mayonnaise
6 ounces cream cheese, softened
1 tube (8 count) crescent rolls
1 egg white, slightly beaten
poppy seeds

Drain and finely chop the mushrooms, chop the bacon, and mix the bacon, mushrooms, garlic powder and mayo.

Heat the oven to 375?.

Remove 2 triangles of the crescent rolls without separating them (so you should have a rectangle of dough). Put the rest of the crescent rolls back in the fridge so it doesn’t get sticky.) Spread the rectangle with softened cream cheese and then with ¼ of the mushroom and bacon mixture. Roll the dough lengthwise. Carefully slice the roll into 12 pieces (each will be about ½ inch thick). Place the slices on a greased cookie sheet or on parchment paper on an ungreased cookie sheet. Repeat this procedure with the remaining crescent rolls. Brush with egg white and sprinkle with poppy seeds. Bake until lightly browned (10 minutes or so). Makes 48 canapes.

Serve warm. Leftovers can be kept in the fridge in an airtight container – heat in the microwave to warm before serving. These may be frozen.

Since there was finally snow 7 members enjoyed Nelson's beautiful wintry trail. Marta Szoke, Bob And Shirley Metcalf strapped on shoe shoes and Russ Nelson and Trish Lewis put on their cross country skis and led the way for an invigorating run. Late comers (Bob And Sue Meyer) did a second round with Russ Nelson. All in all, it was good exercise and a lot of fun. The food was great and a nice variety. Heather showed some of us her exciting craft projects.

The Meeting was called to order by Shirley Metcalf.

The treasurer report was given: new balance is $195.92; we paid only $25.05 for the ham. Ham for christmas was a bargain this year at Aldi's only $1.39 a pound! the club donated $50.00 to the Holiday Fund. Future expected expenses are for main course for Derby Day and lamb or meat for Summer Picnic. A full report of the treasurer is available for your perusal in the green book.

Old Business:

The Metcalf’s stated that everyone in the club needed to start thinking about who will take over the Presidency, since this is their last year.

Bob Meyer gave a report on the LaPetite Rouge Cross Country Trip planned for February 2 - 4, 2007.

The Smuggler's Notch (Burlington Vermont) on January 12, 13 and 14, 2007, was postponed because of lack of snow. Metcalf’s and Fitzsimons will go to Vermont on January 26, 27 and 28.

New Business:

No meeting in February.

Sunday, March 11th, 2007 Joe and Jutta will host a cross country ski meeting. Everyone who wants to ski should meet at 2 PM at the Fitzsimons or at 4:30 for the dinner and meeting. Jutta and Shirley will be callers for this meeting.

No meeting in April

May 5th is Derby Day Meeting at Sue and Bob Meyer at 5:00 pm. At this meeting we will name our new President. Who in the club will take over this fun job? The September meeting should be the first meeting for our new officers, who would like to host the September meeting.

No meeting in June: Dick and Joanne Partch agreed to host our summer meeting in August.
